Preparation

Rinse the sushi rice thoroughly under cold water to remove excess starch.

Cooking

  1. In a medium pot, combine the rinsed rice and chicken stock.
  2. Bring to a gentle simmer over medium heat, then reduce the heat slightly to maintain a gentle simmer.
  3. Cook for 1 to 1½ hours, stirring every 15 minutes, until the rice breaks down and the mixture thickens into a creamy porridge.

Plating & Serving

  1. Ladle the hot congee into individual bowls.
  2. Season lightly with salt to taste.
  3. Serve with your choice of toppings such as green onions, garlic, chili oil, soy sauce, sesame oil, sesame seeds, soft-boiled eggs, and roasted chicken.

Notes

Adjust the consistency of the congee by adding more stock if it becomes too thick. Customize the toppings to your preference for added flavor and texture.
