Ingredients
- 10 oz boneless chicken breast (or boneless chicken leg) , diced to 2/3” (1.5 cm) cubes
- 1 tbsp Shaoxing wine (or dry sherry)
- 2 tsp cornstarch
- 1/4 tsp salt
- 2 tbsp black bean sauce
- 1 tbsp Shaoxing wine (or dry sherry)
- 1 tbsp oyster sauce
- 1/2 tsp dark soy sauce (Optional, see footnote 1)
- 1 tbsp water
- 1 tsp sugar
- 1/8 tsp ground black pepper
- 1/2 tsp cornstarch
- 2 tbsp peanut oil (or vegetable oil)
- 1/4 white onion , diced (or 1 big shallot)
- 1 tsp minced ginger
- 2 cloves garlic , sliced
- 1 bell pepper , diced

- Combine chicken breast, Shaoxing wine, cornstarch, and salt in a bowl.
- Mix well and set aside.
- Combine all the ingredients for the sauce in a small bowl.
- Heat 1 tablespoon of oil in a large skillet over medium-high heat until hot.
- Spread chicken in the skillet without overlapping.
- Let cook for 30 seconds without stirring.
- Use a pair of chopsticks (or tongs) to separate the chicken.
- Cook until the bottom side turns slightly golden.
- Flip and stir chicken to cook other sides, until the surface is cooked.
- Immediately transfer to a plate.
- Add the remaining 1 tablespoon oil to the skillet and turn to medium heat.
- Add the onion, ginger, and garlic.
- Cook until the onion begins to turn soft, 30 seconds.
- Add the bell pepper and stir a few times.
- Add sauce.
- Give it a quick stir.
- Add the chicken back into the skillet.
- Stir and cook until the sauce thickens, 1 minute.
- Taste the chicken and adjust the seasoning by adding a pinch of salt, if needed.
- Immediately transfer everything to a plate.
- Serve hot as a main dish.
