Preparation

  1. Flatten the chicken breasts to about 2cm thick using a rolling pin.
  2. Season them with salt, pepper, and paprika.

Cooking

  1. Heat sunflower oil in a large frying pan over medium heat.
  2. Cook the bacon until crispy, about 5 mins, then remove and chop.
  3. In the same pan, fry the chicken in the bacon fat until golden on one side, about 4-5 mins.
  4. Push the chicken to one side and add onion and garlic to the pan, cooking until the onion softens, about 3-4 mins.
  5. Stir in Dijon mustard, then pour in chicken stock and cream.
  6. Move the chicken back to the center, coat with sauce, and bring to a boil.
  7. Add kale and simmer for 10 mins until the chicken is cooked through and the sauce thickens.

Plating & Serving

  1. Turn off the heat and stir in Parmesan.
  2. Scatter chopped bacon and pecans over the top before serving.

Notes

For a variation, substitute kale with spinach, adding it only in the last 2 mins of cooking.
