Whip up something easy midweek like this all-in-one sausage traybake, topped with crunchy, herby croutons

Ingredients

  • 8 pork sausages
  • 1 medium head of cauliflower cut into small florets and leaves chopped
  • 1 head of broccoli cut into medium florets, stalk peeled and cut into chunks
  • 1 red onion cut into wedges
  • 3 tbsp red wine vinegar
  • 1 1/2 tbsp honey
  • 3 tbsp wholegrain mustard
  • 3 tsp fennel seeds
  • 3 tbsp olive oil
  • 50 g soft butter
  • 3 garlic cloves crushed
  • 2 tbsp chopped basil, parsley and thyme
  • 2 sourdough slices cut into cubes

Cooking

  1. Heat the oven to 200C/180C fan/gas 6.
  2. Toss the sausages, cauliflower, broccoli and onion into a baking tray.
  3. Whisk the vinegar, honey, mustard, fennel seeds and oil together.
  4. Pour over the sausages and veg, and season.
  5. Roast for 25-30 mins until golden, sticky and glazed.
  6. Give everything a turn halfway through cooking.
  7. Melt the butter, garlic and herbs with some seasoning in a bowl in the microwave or in a small pan.
  8. Toss in the bread cubes and toss well.
  9. Scatter the croutons over the traybake and bake for 5-10 mins more, until golden and crisp.
  10. Serve with potatoes, if you like.
