  • {'group': 'Garnish', 'item': 'flat-leaf parsley, roughly chopped (optional)'}

Preparation

  1. Thinly slice the leeks and mushrooms.
  2. Grate or crush the garlic cloves.
  3. Defrost the peas if frozen.

Cooking

  1. Combine the risotto rice, leeks, garlic, mushrooms, white wine, and vegetable stock in the slow cooker.
  2. Season with 1 tsp of salt and a generous amount of black pepper.
  3. Stir to mix.
  4. Cook on low for 2 hours, stirring occasionally, until the rice is al dente and the liquid is absorbed.
  5. Stir in the peas, then mix in the parmesan and butter until the risotto is creamy.
  6. Adjust seasoning if necessary.

Plating & Serving

  1. Divide the risotto among four plates.
  2. Top with extra grated parmesan and a crack of black pepper.
  3. Garnish with chopped parsley if desired.

Notes

For added flavour, finish with a grating of lemon zest. For a non-vegetarian option, top with sliced and fried chorizo.
