Ingredients
Main
- 2 tbsp olive oil
- 1 leek, cleaned and finely sliced
- 1 courgette, peeled and chopped
- 225g cabbage, shredded
- 75g green beans, trimmed and halved
- 1L vegetable stock
- 100g soup pasta
- 1 tbsp dry white vermouth or white wine (optional)
Seasoning
- Salt and pepper, to taste
Garnish
- Grated Parmesan cheese
Preparation
- Clean and finely slice the leek.
- Peel and chop the courgette.
- Shred the cabbage and trim and halve the green beans.
Cooking
- Heat olive oil in a heavy-based pan over medium heat.
- Add the leek and courgette, cooking for about 5 minutes until softened.
- Stir in the cabbage and green beans, cooking for an additional 3 minutes.
- Pour in the vegetable stock, bring to a boil, then reduce to a simmer.
- Cover and cook for 20 minutes.
- Remove the lid, bring back to a boil, and add the pasta.
- Cook for 10 minutes or until the pasta is tender.
- Stir in the vermouth or white wine, if using, and let it bubble for a few seconds.
- Season with salt and pepper.
Plating & Serving
- Allow the soup to cool slightly before serving.
- Ladle into bowls and top with grated Parmesan cheese.
Notes
This soup can be made 1-2 days ahead and stored in an airtight container in the fridge. Reheat gently before serving. It can also be frozen for up to 3 months.
