Ingredients

Main
  • 2 tbsp olive oil
  • 1 leek, cleaned and finely sliced
  • 1 courgette, peeled and chopped
  • 225g cabbage, shredded
  • 75g green beans, trimmed and halved
  • 1L vegetable stock
  • 100g soup pasta
  • 1 tbsp dry white vermouth or white wine (optional)
Seasoning
  • Salt and pepper, to taste
Garnish
  • Grated Parmesan cheese

Preparation

  1. Clean and finely slice the leek.
  2. Peel and chop the courgette.
  3. Shred the cabbage and trim and halve the green beans.

Cooking

  1. Heat olive oil in a heavy-based pan over medium heat.
  2. Add the leek and courgette, cooking for about 5 minutes until softened.
  3. Stir in the cabbage and green beans, cooking for an additional 3 minutes.
  4. Pour in the vegetable stock, bring to a boil, then reduce to a simmer.
  5. Cover and cook for 20 minutes.
  6. Remove the lid, bring back to a boil, and add the pasta.
  7. Cook for 10 minutes or until the pasta is tender.
  8. Stir in the vermouth or white wine, if using, and let it bubble for a few seconds.
  9. Season with salt and pepper.

Plating & Serving

  1. Allow the soup to cool slightly before serving.
  2. Ladle into bowls and top with grated Parmesan cheese.

Notes

This soup can be made 1-2 days ahead and stored in an airtight container in the fridge. Reheat gently before serving. It can also be frozen for up to 3 months.
