Use your air fryer to rustle up some homemade falafel to enjoy with your favourite accompaniments — tabbouleh, hummus, tahini sauce and salad work well

Ingredients

  • 400 g can chickpeas drained
  • 1 small red onion roughly chopped
  • 1 garlic clove finely grated or crushed
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 10 g parsley roughly chopped
  • small handful of mint leaves
  • 1 small or medium egg
  • 1-3 tbsp plain flour (optional)
  • oil spray
  • your choice of tabbouleh hummus, tahini sauce and salad, to serve

Cooking

  1. Put all the ingredients except the egg, flour and oil into a food processor and blitz until finely chopped and beginning to come together (not becoming a purée).
  2. Tip into a bowl, then mix in the egg and some salt and pepper.
  3. If the mixture is too wet to handle or to form into balls, add 1-3 tbsp plain flour to thicken the mixture slightly.
  4. The mix should be quite wet but easy enough to handle.
  5. Chill for 20 mins, then form into eight balls and flatten them lightly.
  6. Heat the air fryer to 200C, then spray each falafel with oil and bake for 10-15 mins until cooked through and golden.
  7. Serve with accompaniments of your choice.
