Balsamic vinegar is an intensely concentrated grape vinegar, originating from Italy. It's delicious as is, but when reduced down, it adds the most amazing burst of flavor to any dish. We love it drizzled over juicy, fresh tomatoes, creamy hummus, or on salads containing crisp greens.

  • 1 cup (240ml) balsamic vinegar
  • 1 Tbsp granulated sugar

  1. In a small saucepan, combine the balsamic vinegar, and sugar if using, and bring to a boil over high heat.
  2. When it starts to boil, reduce the temperature to maintain a simmer.
  3. Cook the vinegar down, stirring occasionally until it's about a third of the original volume, which should take about 13 - 15 minutes.
  4. Allow the reduction to cool completely before transferring to a glass jar.
  5. The reduction will continue to thicken as it cools.
  6. Enjoy!.
