Preparation

  1. Quarter the chicken thighs and chop the carrots, potatoes, and celery.
  2. Dice the onion and grate the Cheddar cheese.

Cooking

  1. In a large saucepan, combine chicken, carrots, potatoes, celery, salt, pepper, thyme, and chicken stock.
  2. Bring to a boil, then simmer for 15 mins.
  3. Preheat the oven to 190°C (375°F (190°C)).
  4. In a casserole dish, melt butter over medium heat, add onion, and cook until softened.
  5. Stir in flour to form a roux, then gradually whisk in the stock from the saucepan until thickened.
  6. Add the chicken and vegetables to the sauce and simmer.

Plating & Serving

  1. Spoon the dumpling mixture over the stew, bake for 15-20 mins until dumplings are golden.
  2. Rest for 5 mins, garnish with parsley, and serve.

Notes

For a twist, substitute Cheddar with Red Leicester or Parmesan. Add garlic powder for extra flavour.
