Preparation

  1. Place cube steaks in a baking dish and cover with milk.
  2. Marinate at room temperature for 15-20 mins or refrigerate overnight.
  3. Mix crushed crackers, flour, salt, and pepper in a large dish.

Cooking

  1. Heat 1-inch (3cm (1-inch)) of oil in a cast-iron skillet over medium-high heat until shimmering.
  2. Remove steaks from milk, coat in cracker mixture, pressing to adhere.
  3. Fry steaks in batches for 3-5 mins per side until golden brown.
  4. Drain on a wire rack.
  5. For gravy, if oil is clean, retain 60ml in the skillet; otherwise, use butter.
  6. Add flour, whisk until browned, then gradually add milk, whisking until thickened.
  7. Season with salt and pepper.

Plating & Serving

  1. Serve the chicken fried steak topped with cream gravy.
  2. Garnish with freshly cracked black pepper.
  3. Pair with mashed potatoes and green beans for a complete meal.
