Garlic and Thyme Confit Potatoes

Indulge in these Garlic and Thyme Confit Potatoes, slowly cooked to perfection in duck fat for a rich, buttery flavor. Perfect as a side dish for any meal!

Ingredients

  • {'group': 'Main', 'item': '1kg Charlotte potatoes, halved lengthways'}
  • {'group': 'Main', 'item': 'Duck fat, ghee, clarified butter or olive oil, to coat'}
  • {'group': 'Main', 'item': '4 thyme sprigs'}
  • {'group': 'Main', 'item': '3 garlic cloves, skin on and bashed'}
  • {'group': 'Seasoning', 'item': 'Sea-salt flakes and black pepper'}

Preparation

  1. Halve the Charlotte potatoes lengthways.
  2. Bash the garlic cloves with the skin on.

Cooking

  1. Place the halved potatoes, thyme sprigs, bashed garlic, and enough duck fat (or alternative) to coat in the slow cooker.
  2. Season with 1 tsp of sea-salt flakes and plenty of black pepper.
  3. Stir to combine.
  4. Cover and cook on high for 5-6 hours or on low for 7-8 hours until the potatoes are tender.
  5. Once cooked, remove the potatoes from the fat and place them flat-side down in a frying pan over medium-high heat.
  6. Allow them to caramelise until golden, about 10 minutes.

Plating & Serving

Serve the confit potatoes warm, garnished with additional thyme if desired.

Notes

The infused fat can be stored in an airtight container in the fridge for reuse. Experiment with different fats like beef or goose for varied flavours.
