Ingredients

  • Juice from 1 lime
  • 2 tbsp olive oil
  • 2 tsp raw honey
  • 1/8 tsp kosher salt
  • Freshly ground black pepper (to taste)
  • 2 cups (480ml) cubed watermelon
  • 2 cups (480ml) peeled and cubed jicama
  • 1 large cucumber (peeled, seeded and cubed)
  • 1/4 cup thinly sliced red onion
  • 2 oz cubed or crumbled feta cheese
  • 1 tbsp chopped fresh mint leaves
