Ingredients

  • 4 lbs Russet potatoes (peeled and cut into quarters)
  • 1/4 cup butter
  • 1 1/2 tsp minced garlic
  • 8 oz cream cheese (cut into cubes)
  • 1 cup (240ml) milk
  • 1 1/2 tsp salt
  • 1/2 tsp pepper
  • 2 tbsp chopped parsley or sliced chives
  • additional butter for garnish (optional)

Cooking

  1. Bring a large pot of salted water to a boil.
  2. Add the potatoes and cook for 20 minutes or until tender.
  3. Drain the potatoes and add them back to the pot.
  4. Place the butter and garlic in a small bowl.
  5. Microwave in 30 second increments until butter is melted.
  6. Add the melted garlic butter, cream cheese and milk to the pot of potatoes.
  7. Mash the potatoes until they're smooth and creamy.
  8. Stir in the salt and pepper.
  9. Sprinkle with parsley or chives, then serve.
  10. Garnish with additional butter if desired.
