Ingredients

  • 2 1/2 cups unsalted mixed nuts (used here are almonds, walnuts, cashew and pistachio)
  • 2 tbsp unsalted butter
  • 2 tbsp granulated sugar
  • 1 1/2 tbsp light brown sugar
  • 1/2 tsp paprika
  • 1/2 tsp cumin powder
  • 1/2 tsp freshly ground pepper
  • 1 tsp salt

  1. In a bowl, mix together the sugars, paprika, cumin powder, black pepper, and salt.
  2. Set aside.
  3. In a heavy skillet, melt butter and cook the nuts for about 2-3 minutes, stirring continuously.
  4. Sprinkle the sugar and spice mixture over the nuts and continue cooking for about 8-10 minutes until the sugar caramelizes.
  5. Stir constantly to prevent burning.
  6. Once done, transfer the nuts to a large cookie sheet or platter to cool, then serve.
